Cheesy Smashburger Tacos

Ingredients:

1 pound 90% extra lean ground beef

1/3 cup Pace® Signature Sauces Hot Honey Chipotle (amount divided in recipe steps below)

1 cup shredded Cheddar cheese (about 4 ounces)

4 flour tortillas (6-inch)

1/2 cup shredded iceberg lettuce

1/4 cup chopped dill pickle

1/4 cup chopped white onion

Directions:

1. Mix the beef and 4 teaspoons sauce in a bowl. Shape the mixture into 4 patties. Season with salt and pepper.

2. Heat a 12-inch nonstick skillet over medium-high heat. Place 1/4 cup cheese in the center of the skillet. When the cheese begins to melt, place 1 tortilla on top of the cheese and press down with a spatula so the cheese adheres to the tortilla. Cook for 1 minute or until the cheese is lightly browned. Remove the skillet from the heat. Let stand for 30 seconds. Transfer the tortilla to a baking sheet, cheese-side up. Repeat with the remaining cheese and tortillas. Wipe the skillet clean.

3. Turn the tortillas cheese-side down. Place 1 beef patty on each tortilla. Spray the skillet with cooking spray and heat over medium-high heat. Add 1 tortilla, beef-side down, to the skillet and immediately press down firmly with a spatula to flatten the beef. Cook for 3 minutes or until the beef is done. Transfer to a serving plate, beef-side up. Wipe the skillet clean. Repeat with the remaining tortillas.

4. Top with the lettuce, pickles, and onion. Drizzle with the remaining sauce before serving.

Cilantro Jalapeño Lime Protein Bowls

Ingredients:

1 1/2 cups Swanson® Natural Goodness® Chicken Broth

3/4 cup uncooked long grain white rice

1 cup frozen whole kernel corn, thawed and well drained

1 cup drained rinsed canned black beans

1/2 cup Pace® Signature Sauces Cilantro Jalapeño Lime Sauce (amount divided in recipe steps below)

2 cups cubed cooked chicken (warmed, if desired)

1 cup cherry tomatoes, cut in halves or quarters

1 large avocado, pitted, peeled, and diced (about 1 cup)

1/2 cup crumbled queso fresco

2 green onions, sliced (about 1/4 cup)

1/4 cup chopped cilantro

Directions:

1. Heat the broth in a 2-quart saucepan over medium-high heat to a boil. Stir in the rice. Reduce the heat to low. Cover and cook for 20 minutes or until the rice is tender.

2. Stir the corn, beans, and 2 tablespoons sauce in a bowl.

3. Divide the rice among 4 bowls. Top with the chicken, bean mixture, tomatoes, avocado, and queso fresco. Drizzle with the remaining sauce. Sprinkle with the green onions and cilantro.
