Arugula is a peppery, leafy green that delivers a delightful pop of flavor in a mix of spring greens. This cruciferous vegetable belongs to the Brassicaceae family, along with broccoli, kale, brussels sprouts and cabbage. It’s packed with antioxidant benefits, including vitamins and minerals like vitamin K, iron, calcium, folate and magnesium.

Arugula often grows best in cooler climates, and although it can be grown year-round in certain areas, it is considered in-season during the spring and fall.

How to Mix up Meals with Arugula:

  • Swap basil with arugula to create a peppery pesto.
  • Sprinkle arugula across pizza and finish with a drizzle of balsamic.
  • Add fresh arugula to an omelette instead of spinach (or use both!).
  • Stir arugula into pasta salads (like the recipe below).
  • Layer arugula in sandwiches or wraps.
  • Toss arugula with a medley of greens, like spinach and romaine, for a filling salad
