Murray's Cave Aged Reserve Cornelia

Our Cave Aged Cornelia is a buttery cheese made in collaboration with California’s Point Reyes Creamery. We age it until it has a rich profile of roasted peanuts and fresh bread, with a slight funk. Serve it with orange marmalade for a PB&J-inspired bite.

Smooth and nutty. Herby and tangy. This is snackable Italian mountain cheese by way of Wisconsin and NYC. Wheels from Roelli Cheese Haus come to our caves, where we coat them in fennel pollen and bathe them in white wine. Try it with a drizzle of honey.
