BrightFarms Kale & Arugula Salad

Preparation

  • Add equal amounts kale and arugula in a mixing bowl and add the toasted pumpkin seeds, shredded carrots and crumbled goat cheese.
  • To make the vinaigrette: in a bowl, whisk the vinegar, Dijon, honey & salt and pepper. Continue whisking and slowly drizzle in the olive oil. The ratio should be 1 part vinegar to 2-3 parts olive oil, depending on your taste. When the vinaigrette emulsifies, lightly dress the salad and gently toss to combine.
