Ingredients

Cilantro Citrus Prawns

Preparation

  • 1. Combine the sauce ingredients (except salt, pepper and Cajun Seasoning) in a medium-size saucepan and bring to a boil. Reduce the heat and simmer for 15 or 20 minutes. Do not allow the mixture to evaporate. It should bubble very slowly. Season to your taste with salt and pepper and Cajun Seasoning.
  • 2. Add the prawns and bring to a boil. Reduce the heat and simmer for 5 to 8 minutes, depending on their size, or until they turn bright pink. Do not overcook the prawns or they will become rubbery.
  • 3. Place the rice on a serving platter, arrange the prawns on top and spoon the sauce over them. Sprinkle with the mint and cilantro and serve immediately.
